Bolognese baked eggs

Very occasionally I have a breakfast not containing eggs (although not often!) but when I do I try and incorporate them into dinner as they are just so delicious and full of nutrients. Tonight’s mash up was a twist on a breakfast favourite of mine but with turkey mince added for lean protein and it tasted amazing!


Serves 1 (with a portion of mince in the fridge to be used another day) or serves 2 as a main meal


500g turkey mince

1 Red onion, chopped

1 garlic clove, minced

1 cup mushrooms, sliced

2 tsp coconut oil

Large handful of spinach/kale

1 tin of plum tomatoes or passata

1 tsp cumin

1 tsp paprika

1 tsp chilli flakes

2 or 3 eggs



  1. First heat your coconut oil in a frying pan and add the red onion to soften and preheat your oven to 180 degrees
  2. After a few minutes add the garlic and the turkey mince with the spices and some seasoning, cook until lightly browned
  3. Add the mushrooms, kale and the tin of tomatoes and cook down until reduced to quite a thick sauce, this should take about 7-10 minutes
  4. At this point I removed half of the mince mixture and saved for another day, but if you are feeding two then you can ignore this step
  5. With the remaining mince, make wells for the eggs and crack an egg into each
  6. Place the pan into the oven and bake for about 10 minutes until the whites are cookedBolognase baked eggs
