So it will come as no surprise to most of you when I say I LOVE eggs. I could eat them for every meal because they are so versatile, cheap to buy and absolutely delicious. There are a whole number of meals you can make using these little nutrient powerhouses so I always make sure I have them on hand at home. So many of these meals take very little time too so there really are no excuses for not eating a balanced and healthy meal!
Here is my countdown of the top 5 things to do with eggs:
#5 Paleo Egg Muffins
These little muffins are perfect whilst on the go – you can make them at the weekend and prepare lots in advance, storing them in the fridge until required. You can fill with so many meats, veggies and even fruit if you have a sweet tooth – high in protein and low in carbs these make for a great rest day feast!
For when you need to be the queen of speed! Scrambled eggs are easily the fastest way to enjoy as they can be ready in the microwave in less than 2 minutes. I love adding a little sprinkling of feta to enhance the flavour and sometimes mix through some chopped tomatoes and wilted spinach to get those micronutrients in. Of course you can also make super indulgent ‘proper’ scrambled eggs if you have time at the weekend but this is a great way to eat well if you don’t have much time!
So whilst you do need other things for this recipe, you don’t need much and the taste is so worth it! A delicious weekend breakfast and this is sure to impress your guests. You can make pancakes with as little as 2 ingredients by just mashing up a ripe banana and mixing with egg, alternatively get a little creative and add other things such as protein powder, oats, sweet potato, flaxseed, cottage cheese, the list goes on!
#2 Soft boiled
So I realised at uni that I think I’m the only person in the world that used to call a boiled egg with soldiers a ‘chucky egg’, blame the Yorkshire upbringing! But whatever you call it, soft boiled eggs are one of the best things ever. There is no better feeling than getting a clean peel then cutting in half and the yolk rushing out. Eat this with breakfast, lunch or dinner and enjoy – my method? Pop your eggs into boiling water for 6 minutes then plunge into ice cold water before peeling, they’ll be perfect every time!
#1 The Poachie stack
This is probably the most stereotypical blogger thing to say but poached eggs are my favourite – there really is nothing quite like them. They do take a little longer to make so are more of a weekend feast but they are so worth it. My favourite way to devour is in a stack with bread (yes, bread – and not the gluten free kind), bacon/sausages, avocado, spinach, tomatoes, whatever you fancy – layer up all of your favourite goodies then pop the eggs and enjoy your little yolkie waterfall.
