Festive Apple Crumble

I don’t know about you but everything I eat at the moment has to have some kind of festive twist or i’m just not interested, I am loving eating everything with cranberries just because it makes me feel that bit more christmassy. Since getting back from taking my exams I’ve been making the most of every moment in my own kitchen and have been busy creating some yummy recipes so I thought it was about time I shared one with you.


Crumble has always been a favourite of mine so when I saw a Caramelised Apple crumble recipe online I knew I had to take inspiration and create a healthier alternative for us all to enjoy at christmas. I’ve written the recipe to serve one but you can always scale up to feed more (although to be honest, I’m a big eater so I think a lot of people would have shared that portion, i’m just a piggy!)



1.5 apples, peeled and chopped

1 tbsp beloved date nectar
2 tbsp sukrin gold
Handful of dried cranberries
2 tbsp jumbo oats
Handful chopped nuts of choice
1 tbsp pumpkin seeds
1. Preheat your oven to 180 degrees
2. In a pan, cook together apples with the date nectar and one tbsp of the sukrin gold with a little water until softened and the sauce has thickened slightly, this should take about 8-10 minutes
3. Once the apples are cooked, mix in the dried cranberries then tip the mix into your crumble dish
4. In a bowl, mix together the rest of the sukrin gold, oats, nuts and seeds (you can use whatever you have to hand here, I like using this combination because it gives a good crunch!)
5. Spread the crumble topping over the fruit and place in the oven for about 15-20 minutes until the top has started to brown, you should also be able to smell the caramelly goodness by now!
This is best enjoyed warm with either some yoghurt, ice cream, cream or custard whichever takes your fancy. All I know is that this is certain to please anyone in your family this christmas, they won’t have any idea that it’s a healthier version of an old classic!
