After a brief hiatus from posting recipes for you i’m back! I’ve been working with the lovely people at GATO and Co to create some recipes to compliment their delicious puddings and first up we have a delicious and so simple caramel sauce.
Standard caramel sauce is full of so many nasties so this is a far more natural alternative, and whilst it still contains sugars, I find it doesn’t leave a horrible feeling in your stomach so makes for a lovely enjoyable treat!
1 tin of Coconut milk
80g Coconut sugar
1 tsp Salt
1tsp Coconut oil
1. Shake the tin of coconut milk then open and pour into a pan with the coconut sugar and salt. Mix well then put on medium to high heat.
2. Bring to the boil then turn the heat down to low, allow to simmer for about 45 minutes, stirring occasionally, until the sauce thickens (it should coat the back of a spoon)
3. Add in the coconut oil and mix well, then either serve warm on top of the Chocolate Aubergine Gato pot with some greek yoghurt or allow to cool. Store in a glass jar and it will keep in the fridge for a week!
